Use PHP to process incomming emails

Hey guys,

I need a linux geek here... How do I set it up where I can have my server process an email?

Like if I send a msg to myscriptprocessor@mydomain.com and have a PHP script that processes any incoming email to that address.

I really want to learn how to do this.
